Let's talk about.... meat

That doesn't sound very exciting, but.... I am working on building up our 3-month food supply again. We have gone through different phases in our food storage: draw upon it when needed and build it up when you are able to draw on it later, and on and on it goes!

So, in order to have 90 dinners on hand- whoa, that sounds like a lot! I kind of gauge it on how much meat I have. I know that having beans is the alternate protein source, but we're talking about real food that we normally eat here. So, I like to buy frozen chicken breasts for the freezer and also hamburger.

Recently I have been buying the big packs of hamburger and cooking it up with some onions right away. Then, I put 2 cups into each freezer bag, freeze it, and pull it out of the freezer as needed. Then meals like tacos, spaghetti, etc. happen really fast! I love having the meat there ready to use. I thought I would also start to mix up the hamburger when I bring it home and make it into meatloaf, meatballs, etc. and freezing for some other quick meals. What types of easy dinners do you make at your house? I need some good ideas here! Thanks!!

  1. Chicken breast cut up in little pieces and pre-marinated for shishkabobs, stir fry are good.
    Then of course there is the huge turkey made into chimichanga mix - email me if you want that recipe again. My sister does a lot of freezer meal casseroles and puts them in the tin dinner trays.
